Mint Truffle Chocolate Cookies

Mint Chocolate Truffle Cookies

6 squares Baker’s Semi-Sweet Baking Chocolate
¾ C. (1 ½ sticks) Butter
1 C. Sugar
2 Eggs
1 ¾ C. Flour
½ t. Baking powder
1/3 C. crushed candy canes
1/4 cup melted white chocolate (optional)

Preheat oven to 350. Microwave chocolate and butter in large microwaveable bowl for 2 minutes, or until butter is melted. Stir until chocolate is completely melted. Add sugar; mix well. Add eggs one at a time, mixing until well blended after each addition. Add combined flour and baking powder; mix well. (Dough will be very soft.) Cover and refrigerate for at least 2 hours.

Roll heaping teaspoonfuls of dough into 1-inch balls. Place on baking sheet, 2 inches apart.

Bake at 350 for 10-12 minutes or until tops are set (do not over bake). Immediately sprinkle with crushed candy. Let cool. (2nd option is to drizzle white chocolate on top of them!)

*make sure you use semi-sweet baking chocolate
