Blackened Salmon Fillets

Blackened Salmon Fillets

4-5 lbs salmon.
1 T. of each of the following:
garlic powder
thyme
onion powder
oregano
paprika
tarragon
nutmeg
1 t. salt
½ t. black pepper
1 t. cayenne pepper (optional)
½ c. brown sugar
½ c. soy sauce
Juice of 2 lemons
2/3 c. olive oil.

Mix above ingredients & let salmon fillets marinate for 1 hour. Grill 3 minutes each side per inch thick. Can use with chicken too, and don’t worry if you’re missing a few of the spices, it’s still great!

Healthy Boston Clam Chowder

Healthy Boston Clam Chowder

¼ c. bacon, diced
¼ c. yellow onion, diced
2 small cans chopped clams
2 c. potatoes, diced
2 c. water
1/3 c. diced celery
28 oz. can crushed tomatoes
¼ c. fresh parsley
1 t. salt
1 t. ground thyme
1/8 t. ground pepper

Sauté bacon & onions until bacon is cooked, but not crisp. Add water, tomatoes, clam juice, potatoes, and celery. Simmer until potatoes are tender. Add spices & clams. Heat through. Stir in parsley. Top with Trader Joe’s Oyster Crackers.
