I love this salad! I recived this recipe from my mother-in-law Robyn and fell in love with it. I have made a few additions. HOPE YOU ENJOY!!
SEASONS TORTELLINI SALAD
1 bag romaine salad
½ bag baby spinach
1 c. cherry tomatoes
1 purple onion sliced
1 large avocado
1 bunch steamed asparagus
4 c. grilled chicken
1 jar artichoke hearts
1 pkg. tortellini (cook to bag instructions)
1 cup shredded mozzarella
½ cup pine nuts
DRESSING:
1 T. salt or to taste
3-4 T. sugar
1/4 c. red wine vinegar
½ t. tarragon
1 T. chopped onion
3/4 c. olive oil
2 cloves garlic
½ t. Worcestershire sauce
1 T. parsley
Black pepper to taste
2 t. dijon mustard
Blend dressing ingredients in blender or food processor until well mixed. Pour dressing over tortellini salad and serve.

Caesar Chicken and Mango Pasta Salad
I love this recipe. This is a yummy summer pasta salad, great with BBQ pork sammy’s.
Caesar Chicken and Mango Pasta Salad
6-8 Servings
1 package spiral or bowtie pasta, cooked and cooled
3 large grilled chicken breasts
1 ½ cup diced red bell pepper
1 ½ cup diced red onion
2 cups diced mango
1/3 cup chopped parsley; fresh (can omit, but adds great color and fresh taste!)
1 ½ cup Caesar dressing
¼ cup olive oil
¼ cup red wine vinegar
1 ½ cup Grated Parmesan cheese
Pepper to taste
Mix all ingredients together and let sit in refrigerator for a least one hour. Olive oil and vinegar are used to thin out the Caesar dressing. If the dressing you choose is thin enough don’t worry about this step. You can use less oil or vinegar according to your tastes!
