Orange Chipotle Shish Kabobs

Orange Chipotle Shish Kabobs
1 lb chicken
1 large red pepper
1 large green
1 large onion
2 cups fresh cut pineapple (optional)
2 cups orange chipotle marinade recipe (find below)
* you could also use any marinade you like!

First soak your skewers in warm water for 30 minutes. Cut your veggies and chicken into bite size pieces. Marinate your chicken and veggies in the fridge for a min of 30 minutes; I marinate them separately to avoid contamination. Then skewer the veggies and chicken as you like and grill until chicken is done. I used the indoor grill, but you could also put them on a cookie sheet and broil them in your oven. Just be sure to rotate them. Serve with your favorite rice or cuscus mix. YUMMY.

Orange Chipotle Marinade
1/3 cup orange marmalade or jam
1 teaspoon chopped chipotle, or add more to your own spicy desire.
2 teaspoons red wine vinegar
2 teaspoons olive oil
1 glove garlic chopped
3 teaspoons chopped fresh cilantro!! YUMMY
