Sweet Pork Burritos

Here is my version of the ever-famous sweet pork you find everywhere. Enjoy!
(Note can be substituted with chicken)


SWEET PORK
Yield Serving size 6
Cooking time 3-5 hours
1st marinate your pork loin in regular coke over-night, or for at least 5 hours.
(this will tenderize the meat, this is an optional step. )
 BBQ Sauce mix.
2 cups mesquite BBQ sauce, any kind you like
3/4 cup brown sugar
1/2 cup honey
2 tablespoons molasses (optional, but so so good!)
2 tablespoons Balsamic vinegar
1 can tomatoes sauce (or 1/3 cup ketchup)
2 teaspoon garlic powder
2 teaspoon paprika
1 teaspoon chili powder
(if you like it with more spice you can add up to ½ teaspoon of
cyan pepper this gives it heat, for a more mild sauce use red pepper flakes)
1 Teaspoon onion salt
2-4 dashes of Tabasco sauce depending on how hot you want it
Salt and pepper to taste
Juice of one lemon
 
After marinating the pork loin,  take 1/4 cup of the BBQ sauce and add Chicken broth or water to it so it is covering 2/3's of the pork loin. Cook in a crock pot on low for 3-5 hours. (If you have a pressure cooker this will speed up the process.)
After it has cooked, drain off the liquid then cover the pork with the rest of the BBQ sauce, it is at this time you want to shred it. You can serve immediately or wait and let it sit in the sauce a little longer.


Serve with black beans and lime cilantro rice, (cook rice as normal when done add chopped cilantro and the juice of 1 lime.)

Special Ranch Dressing is just a buttermilk ranch with cilantro, lime juice, and Tabasco to your taste.

These sound so delicious! Do you come up with most of your recipes? I am so excited about this blog, because I love to try new recipes, and I could use all the tips I can get. Rob and I are going to try these this weekend. Most of the time I find a recipe I like and I just kindof adjust it to what I think might taste more interesting. So, hopefully I will come up with something good to email you. I hope someday I will come up with something on my own.
